Found this great recipe for gingerbread cookies.. Enjoy!
350* oven 10-12 min
3/4 cup unsalted butter softened
1 large egg
1 cup granulated sugar
1/4 cup molasses unsulphured
2 1/2 cups all purpose flour
2 tsp cinammon
2 tsp ground ginger
1/2 tsp salt
2 tsp baking soda
cream butter and sugar till light and fluffy then add egg and molasses and mix well
combine flour, baking soda. salt. cinammon and ginger then add to wet ingredients. mix well..
form or scoop balls to slightly smaller than golf ball... roll in granulated sugar ( opt) . place on baking sheet ( i use parchment paper on the sheet) 2-3 inches apart.. bake then allow to cool on the baking sheet about 10 min before transferring to plate
Note this recipe didnt need refrigerating.. i made some balls and some of them i flattened a bit to see if the cookie was any different.. both ways were great.. i didnt bother with rolling in sugar either..

A lot simpler than I thought it would be. I bet the kitchen smells amazing while they're baking.
